I can see where OP is coming from even if he's doing a shit job of explaining himself. I think there are a lot of reasons for why this happens, some of which have been pointed out, but here's my personal take on it.
When you first get into anime, you're usually all about some crap shonen. Dragonball or Naruto or even Captain Tsubasa if you're European or Caballeros del Zodiaco if you're a spic. We'll call it phase one. Not everyone has phase one, some people skip it, but it's there.
Phase 2. You start to develop what you think of as "taste". You want mature anime for mature viewers such as yourself, shit where people die like Sword Art Online or Attack on Titan. You "realize" that shonen is kiddy shit, and that you're above it. You vocally denounce Naruto as many times as possible and hope that no one realizes you know all the fucking side characters and some intricate plot details.
Stage three is full hipster. You probably like some shit no one has ever heard of. Most of /a/ is probably here. Cowboy Bebop and Ghost in the Shell and Mushishi are good but they're "entry level". You aren't a REAL anime fan unless you like some obscure garbage mecha, let's say Area 88. Or maybe you aren't a real fan unless you like some obscure niche bullshit like EVERYTHING Fukumoto makes. You do legitimately know a lot, but you're kind of being a cock.
Stage 4 is as far as I can identify because it's as far as I've gotten, I'm still too young for wizard status. Stage 4 is when you realize it's ok to like fun things. You can enjoy deep shows and debate their deeper meanings. You can watch shitty battle shonen and have fun. But you're also open to recognizing that entire genres and demographics aren't just wholesale shit. Just because it's shonen doesn't mean it's bad. Just because it's a harem doesn't mean it's brainless.You may begin to realize that for the most part, anime fans are a bunch of nerds who were labeled and are now labeling other, wanting to be just one rung higher.
